I’ve got a really quick and flavorful recipe to share with you today!
I like recipes that I can make quickly when I get home from work and this definitely falls in that category. Using a couple premade ingredients really cuts down on the cooking time. It tastes so yummy that even my anti-veggie hubby devoured his whole plate!
2 tsp olive oil
1 clove garlic
3/4 lb ground turkey
3/4 cup prepared pesto
(I used Buitoni Pesto with Basil)
1/2 tsp basil
(omit if your pesto has basil like the one I used)
8 oz Butternut Squash Ravioli
(found in your refrigerated pasta section–I used Pasta Prima 100% Natural Butternut Squash Ravioli)
Put a pot of water on to boil for your ravioli. In a separate pan, heat the olive oil over medium heat. Add garlic and saute until golden. Add ground turkey. Use a wooden spatula to break up the ground turkey and heat until cooked through. Add pesto (and basil if not in the pesto) and reduce heat to a simmer. In the pasta pot, add the butternut squash ravioli and reduce heat to boil gently for about 5 mins. Serve ravioli with turkey pesto mixture on top. Sprinkle with parmesan and herb packet if desired (included with the Pasta Prima Butternut Squash).
