I’ve got a really quick and flavorful recipe to share with you today!
Celebrate St Patrick’s Day with your own healthy and edible rainbow!
I made mine with the colors in order (for all our little learners).
3. Green–Grapes again (kiwi would work too)
5. Orange–Orange slices
The clouds are fruit dip made of 4 oz fat-free cream cheese and 7 oz marshmallow creme mixed together. (Cool whip or marshmallow creme by itself would probably be more fluffy.)
A yummy way to get festive!
Now where to find that pot of gold… 🙂

I’ve been semi-obsessed with Peanut Butter ever since I had my son. So happy to see someone else loves the chocolate + PB combo.

This probably isn’t a new concept, but it’s the first time I’ve come across Pink Velvet. For some reason, it adds a whole new level of fun to Red Velvet–and so do the pops!

Hope you enjoy your weekend!!!
Here’s a lightening fast weeknight supper that is sure to make your weekly rotation!
I love that it gets some big nutritional points with whole grain pasta, omega-3 packed tuna, and lots of that favorite little green veggie.
12 oz Whole Grain Pasta
(I use the Ronzoni Healthy Harvest “Extra Wide Noodle Style”)
10.75 oz Can of 99% Fat Free Cream of Mushroom Soup
12 oz Chunk Light Tuna in Water
15 oz Frozen or Low-Sodium Canned Peas
Cook pasta according to package directions. While the pasta is cooking, heat the soup, tuna, and peas in a saucepan. Drain pasta and toss with soup mixture. Season to taste if you like.
